10 Step Asian Inspired Bourbon Street Chicken

Mardi Gras has come and gone and though I didn’t get to head South and join in the festivities, I was able to get my grubby hands on a Bourbon Street recipe to bring the party straight home to me!

This recipe is said to have come from a kitchen on Bourbon Street run by a Chinese chef. So, if fusion and fun are two of your favourite f-words to pair with your food, then this recipe is for you.

READY IN 40 MINUTES – Serves 4

You will need the following ingredients:

  • 2 lbs of boneless skinless chicken (breasts or thighs)
  • 2 tablespoons of olive oil
  • 1 large garlic clove
  • 1 centimeter of ginger (or a pinch of ginger powder)
  • 1 teaspoon of crushed red pepper flakes
  • 1 quarter cup of apple juice
  • 1 third a cup of brown sugar (light preferred)
  • 2 tablespoons of ketchup
  • 1 tablespoon of cider vinegar
  • 1 half a cup of water
  • 1 third a cup of soy sauce

    1. Cut chicken into cubes
    2. Heat oil in a large pan
    3. Brown the chicken in the oil
    4. Remove chicken
    5. Add all other ingredients to the pan
    6. Cook over medium heat until mixed and dissolved
    7. Add chicken & bring to a boil
    8. Reduce heat to low and simmer for 20 minutes
    9. Make rice
    10. Serve over rice garnish with spring onions and enjoy
